As it says right on the menu, the food is: “handmade, local, seasonal”.
The menu from Ash Wood Fired Pizza changes daily, reflecting the credo of their menu and the true seasonality of their offerings.
Ash is a Sellwood-based food cart, owned and operated by husband and wife team Ted and Alexandra Scharpnick. Ted is a chef by training, having studied at Natural Gourmet Institute in New York City and worked in various restaurants in San Francisco. Ted and Alexandra moved to Portland from San Francisco in January, knowing they wanted to do something with food. Ted loved making sourdough bread but wanted to do something a bit more complex, so they decided to open their first food truck. They bought their truck in British Columbia, Canada – the pizza oven was custom built by the former owner’s uncle from Naples, and cooks at 900 to 1,000 degrees. After a few test runs, the Ash truck opened at the food cart pod on Southeast 13th Avenue on April 22, 2014.
Ash pizzas feature fresh produce, always sourced from Portland farmers markets. As Ted says, “I want to support the local farms and put that energy into my pizza.” Pizza toppings and a salad for each day are chosen based on what looks most fresh and interesting. They generally feature three personal-sized pizza options, salads, and craft sodas from around the world. They also do brunch pizzas! All of their ingredients are vegan other than the cheese, including their homemade pesto. Gluten-free crust and vegan cashew ricotta are also available.
